Island Oasis


  • 60ml aged rum
  • 60ml coconut water
  • 30ml pineapple juice
  • 30ml pineapple shrub

Add all ingredients into a shaker with ice and shake until well-chilled.Strain into a double rocks glass over fresh ice.


This festive cocktail was created by bartender and cocktail educator Jena Ellenwood, who came up with it for a relative’s summer wedding. “The groom requested a Mai Tai,” she says, “but I couldn’t in good conscience make a drink that powerful for a summer wedding, so I created this tropical shrub and added coconut water for hidden hydration.”
