Cactus Pear Margarita


  • 45 ml clear tequila
  • 30 ml Cointreau
  • 30 ml freshly-squeezed lime juice
  • 15 ml prickly pear syrup
  • Lime and kosher salt for garnish

Begin by running a wedge of lime around the edge of your margarita glass. Dip in kosher salt to coat. In a cocktail shaker filled with ice, add the tequila, Cointreau, freshly-squeezed lime juice, and prickly pear syrup. Shake vigorously. Strain into your prepared margarita glasses filled will ice. Garnish with a lime slice to serve.


This intriguing cocktail was created at The Fort restaurant in Morrison, CO, 17 miles southwest of Denver. The restaurant is a replica of Bent’s Fort, often visited by Kit Carson.
